“We can stay up late, swapping manly stories, and in the morning, I’m making waffles!”

This is a breakfast favorite in our house… always announced using the quote above from the movie Shrek.

Be warned – this makes a HUGE batch. We like to make the whole thing and freeze the extra’s. We reheat them in the toaster.

6 cups all-purpose flour (or 3 cups all-purpose and 3 cup whole wheat)
1/4 cup plus 2 tbsp granulated sugar
3 tbsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
5 1/4 cups low fat milk
1 cup plus 2 tbsp vegetable oil
6 large eggs, lightly beaten

Combine the ingredients in the order listed above. Let it sit for 5 minutes before using.
Pour batter onto the center of a pre-heated waffle maker. Follow the instructions for your machine to ensure your waffles are cooked.

Best when served immediately.

Darren’s toppings of choice -
Lots of butter, maple syrup, AND icing sugar.

My toppings of choice – when I use toppings at all. (Yes, I like them dry, fresh off the waffle maker!)
Fresh strawberries with strawberry syrup* and whip cream.

*slice strawberries into a bowl, combine berries with a teaspoon of white sugar and chill for at least 30 minutes. For some extra zing, add orange or lemon zest before chilling.
