This is such an easy banana bread recipe.

I just made it this morning… and made some modifications. I added a heaping tablespoon of ground flax and replaced 1 cup of the all purpose flour with 1 cup of whole wheat flour. It was just as tasty as before…. And just a bit healthier!

2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, click treat beaten
2 1/4 cups of mashed, stuff over ripe bananas

Preheat oven to 350 degrees. Lightly grease a 9×5 loaf pan.
In a large bowl combine the dry ingredients. In a separate bowl, cream butter and sugar. Add eggs and banana and stir until well blended. Add banana mixture into flour mixture and stir until just moistened. Pour batter into prepared loaf pan.
Bake for 60-65 minutes, or until a toothpick comes out clean. Let cool for 10 minutes and the turn onto a cooling rack.
