1/4 cup butter, softened
1 cup brown sugar, packed (I cut it to 3/4 cup)
1 egg
2 tbsp ground flaxseed
2 tbsp honey (I bumped that up to 3-4 tbsp due to the extras!)
2 cups old-fashioned oats
1 cup all-purpose flour (I used ww flour)
1 tbsp cinnamon (it can be cut down if you don’t want a strong cinnamon taste)
1/2 tsp baking soda

Now the recipe calls for:
1/2 cup raisins

But I added instead:
1/4 cup coconut
1/4 cup sesame seeds
1/4 cup poppy seeds
1/2 cup dried cranberries
1/2 cup coarsely chopped almonds (or nut of your choice!)

In a large bowl, beat butter & sugar until crumbly, about 2 mins. Add egg; beat well. Stir in flax & honey. In small bowl, combine oats, flour, cinnamon & baking soda (also add any other ‘extras’); stir into creamed mixture just until blended. Gently stir in raisins (& nuts if you’re adding them!)

Press into 9×13 baking dish sprayed with cooking spray. Bake at 350° for 14-18 minutes or until set and the edges are lightly browned.

Cool, cut, serve!
