This is the side dish that I served with my Christmas ham this year. I didn’t want to do the standard mashed or scalloped potatoes, and these looked ‘interesting’, and had the roasted potato flavor that I love. Best of all, it was very quick and easy!

Ingredients
Small nugget potatoes (3-4 per person, depending on size)
Salt and pepper to taste
Vegetable oil

Directions
Preheat the oven to 425 F. Boil or steam your potatoes (with skin on) until they are tender. I boiled mine in salted water or you could place the potatoes in a foil packet in the oven as well. Once the potatoes are tender, place onto a foil or parchment paper lined cookie sheet. Using another cookie sheet or a fork, ‘smash’ the potatoes until they are all about the same thickness. Drizzle all of the potatoes with the vegetable oil and season with salt and pepper. Bake in the oven for 15-20 minutes until they are golden and crispy. Serve with your favorite main dish. Enjoy!
