Yes…. OMG! How have I gone this far in life without tasting this deliciousness? Thanks to Pinterest, I have discovered roasted broccoli. Genius. I swear, try it tomorrow and make more than you think you’ll need. You will not be sorry! I can’t wait to try this with cauliflower!

Head of broccoli
‘a bit’ of olive oil
4-5 cloves of Garlic (a couple of good spoonfuls of minced garlic)
1/2 lemon, zested and juiced
Parmesan cheese

Preheat oven to 425 F. Cut up your broccoli into bite sized florets. Place on a cookie sheet, drizzle with olive oil. The original recipe called for 5 tablespoons… But I really don’t think you need that much. Just put enough on to lightly coat your florets. Season with salt and pepper, and add your garlic (sliced if using fresh cloves. I used minced garlic in a jar). Time for the magic! Place in your preheated oven and bake for 15-20 minutes (depending on the size of your pieces). The broccoli will ‘brown’ on the edges and be ‘crisp tender’ when done, i.e., NOT brown and soft cause it’s over cooked. Yuck! ok… Once it’s perfect (trust me, you’ll know) remove from the oven and taste… It’s sooo good! Now, sprinkle with cheese and add lemon zest and juice. My husband preferred this without the lemon…. I’d eat it either way. I hope you like this as much as I did! I need to get to the store for more broccoli!
