2 cups rolled oats
1/4 cup light brown sugar
1 1/2 tsp cinnamon
1 tsp baking powder
2 tbsp ground flax seed
1/4 tsp salt
1 1/2 cups skim milk
3/4 cup unsweetened applesauce
1 tbsp melted butter
1 tsp vanilla
1 large Granny Smith apple, patient peeled, cored, and diced

Optional – replace chopped apple with 1 ripe, mashed banana or 1/2 cup natural peanut butter

Preheat oven to 350 degrees F. Coat an 8 by 8 baking dish with cooking spray and set aside. In a large bowl, combine oats, brown sugar, cinnamon, baking powder, flax, and salt. In a medium bowl, whisk together milk, applesauce, butter, and vanilla. Combine wet ingredients and dry ingredients and then stir in diced apples. Pour oatmeal mixture into prepared pan. Bake for 20-25 minutes or until oatmeal is golden brown. Remove from oven and serve warm. Add additional toppings to baked oatmeal.
