My little guy eats pancakes a few times a week. He can eat a LOT of pancake! To make my life easier, I made this pancake mix. I usually add fruit – a handful of fresh or frozen blueberries, one mashed banana, a handful of crumbled frozen raspberries… The possibilities are endless!

Mix Ingredients
4 cups whole grain wheat flour
1 tablespoons granulated sugar
8 teaspoons baking powder
1 teaspoon salt

Using a whisk, mix the ingredients above together. Store in an air tight container until ready for use.

Directions for One Batch
To make a single batch (6 medium to large pancakes) use one cup of the mix and add
1 egg
1 cup milk

Using a whisk, combine the wet and dry ingredients. Gently stir in fruit as desired. Let the mix sit for a minute while your pan preheats. Add oil or vegetable spray to your pan before putting 1/4 of prepared mix (for each pancake) into the hot pan. Flip once the top has bubbled and the outside edge has become ‘set’. Serve with syrup, butter, icing sugar – whatever you enjoy most!
