1 large sweet potato, peeled, sliced into medium sized pieces
1 tablespoon oil (melted coconut oil, or another oil of your choice)
1 egg white slightly beaten
1/2 – 1 teaspoon curry powder (to your taste)
1/2 teaspoon black pepper
1/4 teaspoon salt

Preheat oven to 425 degrees. Mix curry powder, salt, and pepper in a large ziplock bag. Toss sliced sweet potato in a bowl together with the oil and beaten egg white. Once all pieces of potato are evenly coated, add them to the ziplock bag and ‘shake’ to season.

Place potato slices on a greased cookie sheet (not touching each other!). Bake for 30 minutes or until tender on the inside. Turn after 15 minutes of cooking. Cooking time may need to be increased or decreased depending on the thickness of your slices. YUM!!!
