Dilemma – you want a sweet treat… Or maybe your kids do, but you don’t want to load them up with sugar and chocolate after dinner and you don’t want to indulge in high calorie ice cream after bootcamp.

Solution? Chocolate ‘ice cream’!! Ummm…. Huh? Read on… And enjoy. You can thank me later.

4 Frozen, sliced bananas
2 tbsp unsweetened cocoa powder
1/4 cup unsweetened coconut milk (I use So Delicious brand)

Using a food processor, blend coconut milk and frozen banana slices until smooth. Add cocoa powder. Serve immediately for ‘soft serve’ style ‘ice cream’. Or freeze for an hour to enjoy it like traditional ice cream. This recipe serves four.

TIP – I peel and slice my bananas and store them in ziplocks in the freezer. They are perfect for smoothies and this ice cream recipe.
