This is a simple and oh so yummy recipe for muffins. Get out your blender… And your muffin tin. It’s time to bake!

2 1/2 cups of oats (gluten free if you need/want)
1 1/2 tsp baking powder
1/2 tsp baking soda
2 eggs
1 cup plain, low-fat Greek yogurt
1/4 cup honey
1 mashed banana (or swap for 3/4 cup apple sauce if preferred)

Optional: You can also add blueberries, strawberries, rhubarb or any other fruit to the batter AFTER it has been in the blender.

Preheat oven to 400 degrees. Grease tin with non-stick cooking spray or coconut oil.

Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. if you are adding other fruit, add it now and stir it in gently.

Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
